For this workshop, three teams of 3-5 people each picked a box that contained mystery ingredients, and brainstormed to create delicious and healthy dishes using only ingredients found in the boxes. Here are the dishes and ingredients for each dish:
Hummus: garlic (minced), chickpeas (mashed), lemon juice, and salt
Caramelized apricots: dried apricots, orange juice, orange zest, ginger zest, brown sugar, honey, applesauce, and water
Stir fry: carrots, onion, broccoli, bell pepper, fresh ginger, garlic, chili flakes, soy sauce, eggs, vegetable stock, salt, and pepper
Fruit salad: Grapes, strawberries, apple (peeled), honey
Apple sauce: apples, mangoes, cinnamon
Green salad: Spinach, pomegranate seeds, mandarin (peeled), green onion (finely chopped), cucumber
Salad dressing: Olive oil, lemon, vinegar, ginger, garlic, orange juice, salt, and pepper
Baguette crisps: 2 types: Salty-butter, olive oil, garlic, salt, pepper, and oregano. Sweet- Butter, brown sugar, and cinnamon.
Italian Pasta Dish: 2 large onions, 2 large cans of diced tomatoes, 8 cloves of garlic, 1 zucchini, 1 carton of mushrooms (roughly 8-10 mushrooms), oregano, basil, rosemary, a little bit of lemon juice, shredded parmesan cheese, pasta
Tomato Dish: Sliced segments of 5 tomatoes, ginger slices, grated apple or cane sugar, soy sauce, yellow onion, olive oil. Served on top of rice.
